A celebration of Spices at the 02 Restaurant
They upgrade any dish, adding color, aroma, and flavor – but more than that, they tell a story. Classic, exotic, from the Far East or from the Levant – spices are a cook’s oil paints. At the 02 Restaurant, located in Jerusalem’s Inbal hotel, chef Nimrod Norman investigates the world of spices in a special dinner menu, taking guests on a world-spanning culinary journey. Roaming Jerusalem’s markets, Norman has traced a spice road of his own, imaging flavorful dishes which allow spices to shine . “During my research, I was exposed to a great variety of aromas and flavors, some unfamiliar. I ended up creating a minimalistic menu, using a small selection of spices, with dishes from all across the world”, says chef Norman.
